A settings not covered in the tutorial:document size settings
What width and hight settings should I use and should it be in..
percent, inches, cm, mm, points, or picas? Or do these just autoset themselves when you set the rest and I shouldnt worry about em?

Also 8 or 16 bit channel? What do these even mean?

If your using Photoshop 7 do this.....:

File > New
Name it what ever you want.
Width: 6144 - pixels
Height: 4096 - pixels
Resolution: 72 pixels/inch
Mode: RGB
Contents: White
Click OK

Now you have your image now proceed with the following steps:

Image > Mode > Indexed Color
Palette: Custom
Click Load
Change the file type
Load your swatches file
Click OK
Dither: None

Now you are ready to dive in and get your map done

You could also get the map actions for Photoshop. They work in Photoshop 7 quite well. Then you don't need to worry about all that at all.
